Carrot Cake Energy Bites
Heading back to school requires more energy from everyone. From parents getting back into the routine to the kiddos waking up early and having a full day, we’ll take more oomph anywhere we can get it!
Our Carrot Cake Energy Bites Are an Easy Make-Ahead Snack!
Add them to a lunch box or save them as an after school pick-me-up. All you need is a food processor and a few ingredients. Blend, roll and pop them in the fridge until your’e ready to enjoy. If you add them to lunches, just be sure to pack an ice pack (or frozen pouch) to keep them cool.
Ingredients:

12 dates (pitted)

1/4 cup raisins

1 cup rolled oats
-
1/2 cup walnuts
-
1 Once Upon a Farm I Carrot Lot cup

1 tbsp chia seeds
-
1/2 tsp vanilla
-
1/2 tsp pumpkin pie spice
-
a dash of sea salt (optional)

1/2 cup finely shredded coconut
Directions:

Soak dates in hot water for a few minutes to soften.

Drain dates and pulse in food processor.

Add rolled oats, walnuts, I Carrot Lot, chia seeds, vanilla and pumpkin pie spice.

Pulse again until dough forms.

Fold in raisins.

Wet your hands slightly to prevent sticking and form 12 bites.

Roll the bites in coconut and store in an air tight container in the fridge (they’ll last about 3 days).

Makes 12 Energy Bites.
